My parents just got home from Florida this week and while they were gone we had celebrate two birthdays with out them, Penelope’s 1st and Tonys 30th. We also missed my dad’s 59th birthday, and now that we are all together I thought it would be fun to bake a birthday cake on Sunday for everyone. Who doesn’t want to celebrate their birthday twice?
This cake isn’t just for birthdays thou, and since Easter weekend is upon us I thought I’d share this delicious but not to heavy peach cake recipe.
We have been transitioning to eating, baking and cooking with all organic ingredients. Since I have started working out I prefer to cut the sugar in half in this recipe and it turned out great. I even opted out of topping it with sugar because the peaches are pretty sweet. This is a great cake to bring for lunch the next day or just a snack whenever you want.
